Welcome! Today I wanted to share my breakfast, I tried a little something new. I like to call it my veggie hash. It is a great way to use up any leftover veggies in the fridge. I have been making it a lot to use up squash from our garden. It makes a well balanced breakfast and is very simple. I also used up leftover sweet potato from yesterdays lunch. Just chop it up and roast with some spices and coconut oil and pop them in the oven until soft. Since those were already finished my breakfast was a lot quicker to make. It took me about fifteen minutes start to finish. I hope you like it. Comment if you have any questions or suggestions! Good luck, here's what I did:
Veggie Hash

- Mushrooms
- Bell pepper
- Kale
- Squash
- Onion
- Spices/Herbs of choice (Basil, oregano, etc.)
- Salt and Pepper
Directions
~Chop all veggies. Spray a medium pan with olive oil and heat over medium heat, add onions, peppers, and squash. After 2-3 minutes add kale and mushrooms. Add salt and pepper to taste. Put in spices or herbs, I used fresh basil and dried oregano. Once all veggies are sautéed to your liking serve with a protein and carb of your choosing.
~ I served mine with two eggs over easy and diced sweet potato.
