Kale Chips

I am so excited to share my new favorite snack, kale chips!! I don't know about you, but I am a girl that loves her chips. The down side is that there aren't many "healthy" chips out there. I have come to accept this. I have made it my goal to find a substitute for my chip addiction. Many recipes I have tried were not very successful. They were either burnt to a crisp, soggy, or just flat out horrible.
I was becoming very desperate for some kind of homemade veggie chip I didn't care what it took. I followed the instructions exactly. My first batch of kale chips said to massage the oil into the leaves and I literally spent about 45 minutes just massaging oil into a green leaf. I thought these really better be good. When I tried them they were ok, but still not as crisp as I would have liked. The bottom line was that they were definitely not worth the time.
Months later I came across one of the best inventions ever! It was an olive oil spray can. Now I know what you're thinking, that's not anything special, but trust me it is! I have tried many other olive oil sprayers but they all stopped working at some point and they would get messy when you have to refill it. This is a picture of what I have. It is like Pam only without the propellant and its extra virgin olive oil!


These kale chips were really easy to make, that's what I love about them! All I did was stem the kale and then tossed them in olive oil. I think a key factor in how they turn out is the amount of olive oil. If you have too much they will not be able to crisp up.

Kale Chips

-1 bunch fresh kale
-1 Tablespoon Olive Oil (or enough to lightly coat the leaves)
-sea salt

Preheat oven to 350 degree. Cut the stems of the kale out and rip the remaining kale into bite size pieces. Lay the kale on a cookie sheet and evenly coat with oil. Sprinkle with sea salt. Bake for 29-25 minutes or until crisp.

Breakfast Time

Welcome! Today I wanted to share my breakfast, I tried a little something new. I like to call it my veggie hash. It is a great way to use up any leftover veggies in the fridge. I have been making it a lot to use up squash from our garden. It makes a well balanced breakfast and is very simple. I also used up leftover sweet potato from yesterdays lunch. Just chop it up and roast with some spices and coconut oil and pop them in the oven until soft. Since those were already finished my breakfast was a lot quicker to make. It took me about fifteen minutes start to finish. I hope you like it. Comment if you have any questions or suggestions! Good luck, here's what I did:

Veggie Hash

- Mushrooms
- Bell pepper
- Kale
- Squash
- Onion
- Spices/Herbs of choice (Basil, oregano, etc.)
- Salt and Pepper

 Directions
~Chop all veggies. Spray a medium pan with olive oil and heat over medium heat, add onions, peppers, and squash. After 2-3 minutes add kale and mushrooms. Add salt and pepper to taste. Put in spices or herbs, I used fresh basil and dried oregano. Once all veggies are sautéed to your liking serve with a protein and carb of your choosing.
~ I served mine with two eggs over easy and diced sweet potato.

Who does't want a rockin' body?!

Hey everybody, my goal today is to unite those that want to get a killer body! I have always looked for more ways to get a better looking body. After many disappointing attempts I finally came across beachbody programs. I have both P90x3 and 21 day fix extreme. I love both programs but have never actually completed them start to finish. I am looking for anybody that will join me on a journey on completing a beachbody program. My first challeng group is going to be for 21 day fix and fix extreme. You can participate with either program. I know their programs work and I know I like their workout styles.
This will be our own group where we will keep each other accountable. One of the most important parts of successfully completing something is having other people counting on you. It is important to have that something to motivate you!

I would like to officially welcome you all to my blog! On this blog I like to share my journey. I enjoy being active, eating right, and spending time with my family.
